I've just done this with 2000 and it's almost painless.  The best utility
I've found is PartitionMagic (currently 8.0).  It really works well for
resizing and moving partitions.

As to Grub config, have a look at this installation guide.  It's not for
Redhat, but you should get the idea pretty quick.  There's even a setup in
there for XP.
